A charcoal smoker that stands upright comes in two designs. A bullet stacks a fire bowl, a water pan and two grates under a dome, with a door for feeding the fire. A drum is a steel barrel: coals at the bottom, meat hanging from rods across the top, no water pan. Both hold a low fire for hours on charcoal and wood chunks, and both cost far less than a gravity-fed or pellet smoker. This page compares them by design, because a drum and a bullet are not trying to do the same thing. If your smoker should hold its own temperature, that is a fan controller, and a meat thermometer is the other tool you need either way.

We read every smoker here on its own Amazon listing in October 2026, signed in, with its critical reviews, and read each maker’s product page and warranty first-hand. The number every buyer asks about is how long one load of charcoal lasts. Two of the five makers print one, and neither says under what conditions.

The short version:

🏆 Best overall — Weber Smokey Mountain Cooker 18”: Serious Eats’ best smoker under $500, an AmazingRibs gold medal, 4.7★ across 5,508 owner ratings shared by all three sizes, about $419 sold by Amazon. The catch: doors and lids that do not seal on some recent units, and it is not the easiest smoker to learn.

🛢️ Best drum — Pit Barrel Cooker Classic: AmazingRibs Platinum, 4.6★ across 1,157, about $460 sold by Pit Barrel Cooker Co. Runs hotter than 225°F and its damper does not fully close.

🔥 The drum that grills too — Oklahoma Joe’s Bronco: Men’s Journal’s best overall smoker of 2026 and the longest burn time any maker here prints, 14+ hours on 8 lb; about $430. Buy the Amazon.com offer, not the default third-party seller.

💵 Under $60 — Amazon Basics 16” Vertical Charcoal Smoker: 4.5★ across 234 at about $52; small, light and a way to find out whether you like smoking.

⛔ SKIP — Cuisinart COS-118: Serious Eats found misaligned parts, charcoal that “burned very quickly” and temperature swings; 12% of its owners rate it one or two stars.

How to read the ratings. Every rating is an Amazon base we read ourselves, signed in, on 12 October 2026, with its critical reviews. The Smokey Mountain’s 5,508 is one count shared by the 14-, 18- and 22-inch listings (the 18-inch alone carries 1,264 written reviews), and the Cuisinart’s is shared with its 16-inch sibling. The Bronco’s 57 is a thin base on a listing for Oklahoma Joe’s current model; weigh what those owners describe.

The burn time most makers do not print

How long a load of charcoal lasts is the first thing people ask about a smoker, and the makers mostly do not say:

SmokerWhat the maker printsWhat a tester measured
Oklahoma Joe’s Bronco“holds up to 8 lb of charcoal and wood to support 14+ hours” (no conditions stated)AmazingRibs, on the earlier Bronco in 2019: “up to 12 hours”
Pit Barrel Cooker Classic“holds temperature for 6 to 7 hours per load of charcoal with zero intervention required” (said of its cookers in general, with no charcoal weight; the same page puts its cooking range at 275 to 310°F)AmazingRibs: started near 500°F, “gradually stabilized in the 250 range where it could stay for several hours”
Weber Smokey Mountain 18No burn time on its product pageNot timed by Serious Eats or AmazingRibs on this page
Cuisinart COS-118No burn timeSerious Eats: “Charcoal burned very quickly”
Amazon Basics 16”No burn time in its listingNot tested

A burn time depends on the weather, the temperature you hold and how much of the basket you light, which is why a claim with no conditions is a ceiling, not a promise.

Warranty, and who it covers

MakerTermWho can claim
Weber (Smokey Mountain)Bowl, lid and center ring 10 years against rust-through or burn-through; plastic parts 5 years; everything else 2 years—
Pit Barrel Cooker Co.One year; rust-through covered, surface rust not—
Oklahoma Joe’s (Bronco)2 years, all partsBought from Oklahoma Joe’s or an authorized retailer; marketplace sellers “may not be eligible”
Cuisinart (COS-118)3 years, parts and workmanship; enamel damage must be claimed within 30 days, and uneven or discolored enamel is excludedThe original purchaser, with an invoice or payment record
Amazon BasicsThe listing’s own termSold by Amazon

Weber’s “10 years” is the headline number, and it covers the three steel shells. The door, the grates and the hardware carry two years, and the door is what this smoker’s recent critical reviews are about.

Recalls

No recall covers any smoker on this page. We searched the CPSC database on 13 October 2026 for Weber, Pit Barrel, Oklahoma Joe’s, Realcook, Cuisinart and Amazon Basics through its records interface, and for Char-Broil (Oklahoma Joe’s parent) and Napoleon through its own search form. Weber’s two recalls are gas grills, Cuisinart’s are grill brushes, a gas grill and kitchen appliances, and Char-Broil’s smoker recalls are electric and vertical gas models. A control brand returned its recalls at the start and end of each run.

Pros
  • Serious Eats' 16-smoker test: "it made the most flavorful tri-tip in all of our testing, with a distinctly smoky flavor and a tender texture that sliced like butter"
  • The bowl, lid and center ring carry 10 years against rust-through and burn-through, on Weber's own spec table
  • Two grates and a water pan; Weber's listing says it fits a whole turkey and an entire ham at the same time
  • Sold and shipped by Amazon, and the same model sells in 14.5 in and 22 in sizes if 18 in is wrong for your crowd
Cons
  • Fit and finish is the recurring complaint: recent critical reviews describe a door that "does not seal snuggly, nor does the lid", a bottom section you can "see the ground through", and units that arrived bent
  • Serious Eats: "we wouldn't say this is the most beginner-friendly smoker", because one grate sits much closer to the charcoal than the other
  • Sizing up has a catch: AmazingRibs found the 22 in version hard to hold below 275°F, so the bigger bullet runs hotter
What owners complain aboutTheme

Fit, finish and shipping, not cooking. "The door does not seal snuggly, nor does the lid", "The seal for the bottom piece is so poor and ill-fitting that you can see the ground through the seams", a lid that "doesn’t fit the body correctly at all", units that arrived bent or warped, a lid thermometer that "broke after 6 uses", and a 2024 headline: "Fit and finish has gone down hill at Weber."

✓ Safety: no active recallCPSC recall API checked 2026-10-13 (control Ninja returned its recalls at the start and end): RecallTitle=Weber → 2 records, both gas grills (07122, 03180); no recall covers a Smokey Mountain Cooker.

The bullet smoker the testers keep picking. Serious Eats tested 16 smokers and named it the best under $500: it “made the most flavorful tri-tip in all of our testing, with a distinctly smoky flavor and a tender texture that sliced like butter.” AmazingRibs’ review of the 22-inch says the 18-inch “loves to cook at 225°F, and it gets our gold medal.” It has 481 square inches across two grates, a water pan, a side door for adding fuel, and it holds 4.7 stars across 5,508 owner ratings, about $419 sold by Amazon.

Not for you if: you want a smoker that is easy on day one, or you will not check the door. Serious Eats: “we wouldn’t say this is the most beginner-friendly smoker,” because one grate sits closer to the coals than the other. Its recent critical reviews are fit and finish: doors that do not close tightly, a lid that sticks, units that arrive dented. Not every tester is sold, either: Food & Wine called it “serviceable, but not great” and wrote, “We didn’t see good bark or smoke ring development in our tests, and the chicken didn’t fully render.” We still crown it, because two hands-on tests and the deepest owner base here point the other way, but that is the case against it. The 14-inch is the small one; the 22-inch runs hot, and AmazingRibs gave it only Silver for “difficulty getting it down under 275°F”.

Pros
  • AmazingRibs' cook test: "one of the more impressive cookers we've tested", and a Platinum Medal
  • Serious Eats' testers: "Both the chicken and the ribs were superior: juicy, with adequate smoke flavor and an attractive quarter-inch smoke ring."
  • Little fire-tending once it settles: AmazingRibs' probe saw it hold in the 250°F range "where it could stay for several hours"
  • Sold and shipped by Pit Barrel Cooker Co. itself, with the hooks, rods and basket in the box
Cons
  • It cooks hotter than classic 225°F barbecue: AmazingRibs measured it starting near 500°F and settling around 250°F
  • Serious Eats: "The damper was poorly constructed and did not fully close during testing", and owners say there is no way to snuff the fire to save leftover charcoal
  • Reloading means pulling the food: "Adding fuel mid-smoke requires you to remove the cooking grate", and owners describe reaching deep into the barrel
  • One year of warranty, surface rust excluded, and critical reviews report peeling paint and flimsy bolted-on handles
What owners complain aboutTheme

Temperature control and build, plus reload. Owners say "there'sNO WAY to damper down the lower vent", that "the temperature is very hard to control" with "only one cheap intake", that reloading means you "have to remove all the food and practically stick your entire arm inside the barrel", peeling paint, and "The quality just isn't there anymore" from a repeat buyer.

The drum with the shortest path to good barbecue. You light a basket of charcoal, hang the meat from rods across the top, close the lid and leave the one vent alone. AmazingRibs called it “one of the more impressive cookers we’ve tested” and Serious Eats found its chicken and ribs “some of the best we tested across the board.” 4.6 stars across 1,157, sold by Pit Barrel Cooker Co. at about $460. Pit Barrel says a load of charcoal holds temperature for 6 to 7 hours. It publishes no cooking area; its hinged-grate page gives this cooker’s grate as 17.5 inches across. Pit Barrel also sells a 14-inch Junior and a 22.5-inch PBX.

Not for you if: you want a true 225°F or a lot of control. It runs near 250°F by AmazingRibs’ probe, Serious Eats reports a damper that “did not fully close,” and adding fuel means lifting the meat out. Food & Wine, which rates its results “excellent,” adds that with one vent “your initial fire management is the key to success”: light too much or too little and there is little to adjust. Owners in the critical reviews describe paint that peels and a fire that cannot be shut down after the cook. The warranty is one year.

Pros
  • A swing-out fuel door: add charcoal or wood without lifting the meat or the grate out of the drum
  • Oklahoma Joe's rates it at "14+ hours of uninterrupted smoking" on 8 lb of fuel, and one owner reports "3/4 of a basket lasted me 14 hours"
  • Smokes and grills: one owner smokes for 6–7 hours, locks the vents, then grills over the same leftover coals
  • At 136.5 lb it is a heavy drum on wheels, which owners say holds heat well
Cons
  • The default "Add to Cart" seller on Amazon is a third party, and Oklahoma Joe's warranty excludes unauthorized marketplace sellers — open "See All Buying Options" and choose the offer sold by Amazon.com
  • A new listing with a thin owner base and no one- or two-star written reviews yet, so long-term durability is not on record
  • Owners describe a torn lid gasket and a mis-machined grate bracket on arrival, and one recommends sealing seams with food-grade RTV
  • Men's Journal's gear editor, after months with it: the "Access door takes a bit of technique to get latch correctly"
  • The 14+ hour burn is the maker's claim on a full basket; no credentialed test of this model has measured it

No critical written reviews on record. The mixed notes sit in 4- and 5-star reviews: "The lid gasket came torn and 1 of the 3 grate support brackets was machined very wrong", an air-intake shield that took "a YouTube video to understand how to install", and advice to use "food grade RTV gasket maker to seal up some of the seams".

Oklahoma Joe’s says its 8 lb basket supports 14+ hours. AmazingRibs gave the earlier Bronco a Platinum Medal in 2019 and timed it at “up to 12 hours”; that was the previous model. The current one has a hands-on review: Men’s Journal’s gear editor, Adam Bible, used it for months and calls it “my pick for the best-priced, most feature-filled, and accessible charcoal smoker on the market.” He did not time a burn. 4.7 stars across 57 on this listing, with no critical reviews yet.

  • Light enough at about 16 lb to move around the patio or into a car
  • Sold and shipped by Amazon, with Amazon's 30-day return
Cons
  • Thin steel: critical reviews describe units arriving dented or bent, legs that "could be more durable", and doors that "do not have a seal"
  • Assembly is the most common gripe: many small unmarked screws and directions owners call "extremely difficult"
  • Holding temperature takes practice; one owner calls the learning curve "bigger than most", and the top-rated owners still mention it
  • Small: two 16 in racks, and one owner found it smaller than expected
  • No warranty term is published on the listing

The steel-man first: it is a bullet smoker with 510 square inches and a three-year warranty for about $210, and many of its owners are happy with it.

Serious Eats tested it and wrote that “Assembling this smoker was frustrating due to misaligned parts. Buying guide

  • Pick the design first. A bullet gives you a water pan, two grates and a fuel door; a drum gives you fewer settings and a hotter, simpler fire.
  • Read the burn time with its condition. A claim with no temperature, weather or fuel stated is a best case.
  • Check the door and lid when it arrives. The commonest complaint on every smoker here is a seal, not a cook.
  • Buy from the maker’s authorized seller. It decides whether the warranty applies, on the Bronco above all.
  • Want the smoker to hold its own temperature? That is a fan controller, and most fit a Smokey Mountain or a drum. See the best smoker fan controllers.

What is the best charcoal smoker?

For most people, the Weber Smokey Mountain Cooker 18-inch. Serious Eats named it the best smoker under $500 after testing 16 and found it made 'the most flavorful tri-tip in all of our testing'; AmazingRibs, reviewing the 22-inch, wrote that the smaller 18-inch 'loves to cook at 225°F, and it gets our gold medal'; and its Amazon listing holds 4.7★ across 5,508 owner ratings, one count shared by the 14-, 18- and 22-inch sizes. The catch is fit and finish: a run of recent critical reviews describe doors and lids that do not seal. And not every tester agrees: Food & Wine found it 'serviceable, but not great'.

Is a drum smoker better than a bullet smoker?

Neither is better; they cook differently. A bullet (the Smokey Mountain) has a water pan, two grates and a door for adding fuel, and holds a low 225°F. A drum (the Pit Barrel Cooker, the Bronco) hangs meat over the coals with no water pan and runs hotter: AmazingRibs' probe found the Pit Barrel settling around 250°F. A drum is simpler to run; a bullet gives you more control and more grate.

How long does a charcoal smoker run on one load?

Two of the five makers print a figure, and neither states conditions. Oklahoma Joe's says the Bronco 'holds up to 8 lb of charcoal and wood to support 14+ hours'; AmazingRibs measured 'up to 12 hours' on the earlier Bronco in 2019. Pit Barrel says its cooker 'holds temperature for 6 to 7 hours per load of charcoal with zero intervention required', with no charcoal weight given. Weber, Cuisinart and Amazon Basics print no burn time, and Serious Eats found the Cuisinart's charcoal 'burned very quickly'.

Is the Weber Smokey Mountain good for beginners?

It is the one the testers like best, but not the easiest. Serious Eats: 'we wouldn't say this is the most beginner-friendly smoker,' because one grate sits closer to the coals than the other. A drum like the Pit Barrel Cooker has fewer settings to get wrong.

Is the Cuisinart vertical charcoal smoker any good?

Not by the test or its owners. Serious Eats found that 'Assembling this smoker was frustrating due to misaligned parts. Charcoal burned very quickly, and the constant opening and closing of the fuel door caused undesirable temperature swings.' Its Amazon listing holds 4.2★ across 1,747, with 12 percent at one or two stars.

Where should I buy an Oklahoma Joe's Bronco?

From a seller Oklahoma Joe's authorizes. Its warranty covers products bought from Oklahoma Joe's own site or an authorized retailer, and says units from unauthorized marketplace sellers may not be eligible. On Amazon the default seller was a third party when we read it; Amazon.com's own offer sat under See All Buying Options.
