What counts as built-in
Built-in and freestanding are not two grades of the same product — they are two different purchases with different failure modes, and the line between them is the install, not the price. Three tests settle it.
It is sized to a hole
A built-in appliance is specified by its cutout, not its footprint. The island is built around the appliance, so the appliance is chosen first and the opening is cut to its numbers.
It has no cart
No legs, no wheels, no shelves. A built-in grill head, refrigerator or burner has finished sides only where it will be seen, because the rest is buried in the structure.
It is plumbed or wired in place
Natural gas, a dedicated circuit, a water line, a drain. Once the utility is run to the island, the appliance stops being something you move and becomes something you replace in place.
Why the distinction earns its own arena: a freestanding cooker that disappoints you gets sold and replaced in an afternoon. A built-in one is surrounded by masonry sized to its cutout, so replacing it means either finding a successor with the same opening or rebuilding the island around the new one. That is the whole reason the built-in decision deserves to be argued out before the concrete goes in.
